But my love of Lasagna was terribly interrupted with my wheat allergy!
Fast forward two years and I found Ener-G. This Fantastic company has so many options, so many of my favorites ready to go that I about lost my mind when I got try some of their yummy food!
So I grabbed their lasagna recipe here:
8 ea Ener-G White Rice Lasagna Noodles
1 tbsp Vegetable Oil
1 ea onion chopped
1 ea green pepper chopped
1 can sliced mushrooms drained (4oz)
1 1⁄2lb extra lean ground beef
1 can sliced olives (2oz can)
1 ea garlic minced (minced)
2 can tomato sauce, 15 oz
1 cup cottage cheese
1 oz pkg of Cream Cheese (8oz)
1⁄2lb mozzarella cheese sliced
Cook Ener-G White Rice Lasagna noodles according to directions on package. In oil, sauté onion, green pepper, and mushrooms. Set aside. Cook ground beef until browned. Add above mixture plus olives, garlic and tomato sauce. Simmer 20 minutes. Mix thoroughly the cottage cheese and cream cheese. Set aside. Preheat over to 350 degrees F. Place half of the Ener-G gluten free lasagna noodles (4) in bottom of a lightly oiled, shallow baking dish (9" by 13"). Cover with half of the meat sauce, then all of the cheese mixture. Layer the rest of the Ener-G gluten free lasagna, top with the remaining meat sauce and end with a layer of Ener-G Mozzarella Cheese. Bake in a reheated 350 degree F oven, uncovered, for 30 to 40 minutes or until bubbly and golden.
I tweaked it to fit my love of veggies...so I subbed out the green pepper with can diced carrots. YUM!!! And I also, added a 1/2 cup of cheddar cheese. I do pics but can't seem to load them today, :( (I'm a cheesy kinda gal! ^_^)So, next time your looking for a fantastic lasagna that is GF...go grab your noodles from Ener-G!
